Overnight Lactation Oats
A common request of our postpartum doulas is to whip up a batch of lactation cookies during their shift, an easy and delicious snack to keep on hand! For some clients, the amount of sugar they are consuming is a concern or they would prefer to take in those lactogenic foods by some other means than cookies throughout the day. We have the perfect solution and this simple meal can be prepped for the week in a matter of a couple minutes.
INGREDIENTS 2/3 cup plain Greek yogurt
2/3 cup unsweetened milk of choice 1 (heaping) cup oats
1 tablespoon chia seeds
1 tablespoon ground flaxmeal 2 tablespoons brewer's yeast 1/3 cup chopped almonds
1/2 teaspoon vanilla extract
Pinch of salt
Sweeten to taste with honey or maple syrup Mix yogurt and milk in bowl until smooth. Add remaining ingredients, combine until moist throughout. You may need to add more milk! Transfer to storage container, refrigerate and let soak for at least 4 hours. I double or triple the recipe, combine right in a 1/2 gallon mason jar, shake and store for the week. So easy! Once you get your proportions together you can really mix it up! Try adding berries, shredded carrots and cinnamon, cocoa powder and peanut butter, the combinations are endless. Enjoy!
